How to Make It

Step 1

Preheat an oven to 325 degrees. Prepare a loaf pan with parchment paper before making your batter. In a mixing bowl, combine the almond flour, coconut flour, baking powder, stevia, xanthan gum, and salt. Set this aside. In a stand mixer with a whisk attachment, whip the egg whites until frothy. Then, whip in the cream of tartar. Continue whipping the egg whites on high speed until you have stiff peaks that don’t deflate or fall over.

Step 2

Leave the egg whites aside for a moment and melt your butter in the microwave. Mix the melted butter into the flour mixture just before mixing in the egg whites. Use a spatula to fold the egg whites by hand into the flour mixture. Fold the egg whites in 3-4 additions, being as gentle as possible to deflate few egg whites. Once the batter is mixed together, pour it right away into your prepared pan. Gently spread the batter to fill all 4 corners of the pan. Bake the pan uncovered for 20 minutes.

Step 3

After the initial 20 minutes, pull the loaf out of the oven. Create an aluminum foil tent over the loaf, gently tucking the foil around the edges of the pan. Bake for an additional 40 minutes. Let the finished loaf cool for 10-15 minutes before turning it loose onto a cutting board. Slice the cooled loaf into 8 slices, arranging them on a seasoned sheet tray with the white insides facing up. Sprinkle the garlic powder and onion powder over the exposed mini slices of bread.

Step 4

Toast the tray of bread slices in your oven for 10 minutes. This gives the crust a crunchy exterior and lightly toasts the white insides. At your discretion, you can toast longer for darker toast. Drizzle approximately ¼ teaspoon of olive oil over each piece of toast while it’s still warm.
