This Keto Thanksgiving side dish is rich with creamy cauliflower and blended to a smooth mash. This makes a great Keto Thanksgiving recipe as an alternative to carb-heavy potato mash. Perfect served alongside your Keto thanksgiving
Add the cauliflower florets to a large saucepan and cover with boiling water. Bring the water up to boil then reduce to a simmer. Continue to simmer the cauliflower for 5-6 minutes or until tender and soft enough to mash. Drain completely and set aside to steam dry.
Pat the cauliflower with paper towel to remove any excess moisture. Add the cooked florets to a food processor along with the butter, cream, garlic, Parmesan, salt and pepper.
Blend everything until smooth and well combined – or to your desired consistency. Taste the mash and adjust seasonings as required. You may add more salt and pepper, butter or parmesan and extra cream if you would like a richer mash. Please be sure to adjust your macros for any changes made to the recipe.
Transfer the mash to a serving dish. Finely chop the parsley. Scatter the parsley over the mash and serve hot with your Keto Thanksgiving main.
