A creamy vegetable casserole is one of the most important Keto Thanksgiving sides. This recipe is rich, festive, and super delicious, a perfect part of your Keto Thanksgiving Menu. One portion of this side dish has just 3g of net carbs and will keep you satiated for a long time. Serve it alongside your preferred cooked protein for a nutritious and balanced meal.

How to Make It

Step 1

Preheat your oven to 375F/190C. Trim and discard the bottom of the asparagus stems. Chop the stems into 2-inch pieces and transfer them to a bowl. Add the mayonnaise and cheddar cheese. Set the bowl aside.

Step 2

Thinly slice the onion and mince the garlic. Add the butter to a pan and place it over medium heat. Add the onion and saute for 3-4 minutes until golden.

Step 3

Add the minced garlic and cook for 1 minute until fragrant. Add the cream, salt, pepper, and xanthan gum. Stir to incorporate.

Step 4

Cook the mixture for 2-3 minutes until thickened. Pour it into the bowl with the asparagus and other ingredients. Mix everything, and pour the mixture into a baking dish.

Step 5

Add the almond flour and parmesan cheese to a small bowl and mix. Sprinkle the mixture over the casserole. Transfer the baking dish to the oven.

Step 6

Bake for 40 minutes or until the asparagus is just tender and the cheese is bubbly. Broil the top for one minute if you’d like to brown the topping. Serve warm!

  • Almond flour

    3 tbsp

  • Parmesan cheese

    3 tbsp, grated
