How to Make It
Step 1
Preheat an oven to 360 degrees. In a shallow pan, combine the ground beef with all seasonings. Cook on high heat until the beef is cooked through and slightly browned.
Step 2
Remove the pan from the heat. Stir in the chopped onion, lettuce, and cilantro.
Step 3
Prepare the bell peppers by removing the tops and hollowing the centers. Cut each pepper in half, and arrange the halves in an oven-safe baking dish.
Step 4
Spoon the taco filling into each pepper. Top the peppers off with the pepperjack cheese.
Step 5
Bake the taco boats, uncovered, on a middle rack of the oven for about 20 minutes – until the cheese is melted and browned.
