This Swiss cheese bake is rich and creamy with three cheeses and a crispy crumbed topping.
Preheat the oven to 400 degrees Fahrenheit.
Add the ground almonds to a mixing bowl with the Parmesan and season. Stir to combine and set aside.
Heat the olive oil in a large pan over a medium heat. Dice the chicken and add to the pan. Brown the chicken all over and cook through. Keep warm and set aside.
To prepare the sauce, melt the butter in a small pan over a medium heat and add 1 minced garlic clove, sweating until fragrant.
Add the cream cheese and stir through until melted.
Add the stock and cream and stir well to combine. Bring to a gentle boil then simmer for 3-4 minutes to thicken.
Arrange the chicken in an oven proof dish and layer over slices of Swiss cheese.
Pour over the creamy sauce.
Sprinkle over the crumb topping.
Transfer to the oven to bake for 18-20 minutes or until golden brown and completely cooked through.
