Finely chop the cilantro. Thinly slice the scallion and crush the garlic. Add the ground pork to a mixing bowl. Add the cilantro, scallion, garlic and a generous pinch of salt and pepper. Mix together thoroughly with your hands.
Crack the egg into a small bowl. Beat until smooth and well combined. Add the ground almonds, sesame seeds and a pinch of salt and pepper to a separate bowl. Mix together well to combine. This will be your breading mixture. You will not need too much salt to season the breading as the dipping sauce will be quite salty.
Preheat the oven to 400 degrees Fahrenheit and lightly oil a shallow oven tray. Divide the pork mixture into 8 even portions and roll each individual portion into a ball. Take one meatball and coat it liberally in the beaten egg. Then roll the meatball in the breading mixture so that it is well coated all over in the seasoned crumb. Repeat this process with each meatball until they are all coated in a layer of breading. If you need more breading, prepare as required, factoring any additional ingredients into your macros.
Arrange the meatballs across the prepared oven tray. Transfer to the oven and bake for 15-18 minutes or until the pork is completely cooked through. The sesame crumb should be crisp and golden all over.
While the meatballs are cooking you can prepare the dipping sauce. Add the garlic powder, passata (tomato sauce), tamari sauce, maple flavored syrup and apple cider vinegar to a small bowl. Stir together until smooth and well combined. Taste and adjust seasonings as desired, adjusting your macros for any changes. Serve the dipping sauce with the crispy meatballs.
