Line a baking sheet with parchment paper. Crumble the cheese into small “popcorn” sized pieces. Allow the cheese to dry uncovered in the fridge for at least two days.

Then remove the cheese from the fridge and dry at room temperature for 1-2 days until very dry. Once the cheese is dried, place half of the cheese into the bottom of an air fryer basket. Set the air fryer to 390 F (200 C) and cook for 1-2 minutes until the cheese is golden brown and puffed.
Step 3
Remove the cooked cheese to a paper towel-lined plate. Doing so will help to remove any excess fat. Repeat with the remaining cheese.
Step 4
Toss the cheese pieces with the powdered sweetener and sea salt. Serve immediately. Taste and adjust, adding more sweetener or sea salt if desired.
