How to Make It
Step 1
Preheat an oven to 375 degrees and spray a glass baking dish with pan spray. Prepare a large zucchini (starting weight about 8 oz) by slicing it in half lengthwise. Use a spoon, scoop, or coring tool to scoop out most of the inside of the zucchini and discard it, leaving you with mostly-hollow zucchini halves. Your final zucchini weight should be what is listed in the ingredients.
Step 2
Place the 2 zucchini halves in your baking dish. Drizzle the olive oil over each piece, then sprinkle the salt, pepper, and oregano over the zucchini.
Step 3
In a bowl, mix together the marinara sauce, chopped pepperoni, and chopped black olives.
Step 4
Fill each zucchini half with the pizza mixture. Then, sprinkle the mozzarella cheese over the top of each half.
Step 5
Bake the dish for about 25 minutes. Enjoy your supreme pizza zucchini boat hot!
