This keto adaptation of spinach Maria uses cream cheese to create a rich and creamy sauce as opposed to thickening with flour.This makes for a hearty and filling side dish perfect for Thanksgiving or alongside roasted meats.

How to Make It

Step 1

Preheat the oven to 350 degrees Fahrenheit.

Step 2

Set the frozen spinach aside to thaw, then drain away any excess liquid. Arrange the thawed spinach in an oven proof dish.

Step 3

Melt the butter in a pan over a medium heat and finely slice the garlic. Add the garlic to the pan along with the onion and sweat until tender.

Step 4

Add the mustard and cream cheese and stir until the cheese has melted and you have a thick sauce.

Step 5

Add the nutmeg and the cheddar and stir until the cheese has melted.

Step 6

Remove the pan from the heat and pour the cheese sauce over the thawed spinach. Season with salt and pepper and stir well.

Step 7

Scatter over the Monterey Jack cheese.

Step 8

Bake for 15-18mins until bubbling and golden.

  • Garlic – 1 clove
  • White Onion – 1 medium – 2 1/2″ diameter
  • Unsalted Butter – 1 tablespoon
  • Mustard – 1 teaspoon
  • Spices Nutmeg Ground – ⅛ tsp
  • Cheddar Cheese – 1 cup, grated
  • Salt, Sea Salt – ¼ teaspoon
  • Black Pepper, Ground – ⅛ teaspoon
