Add the green beans to a small saucepan of boiling water and simmer for 3-4 minutes until fork tender. Drain completely and set aside to steam dry.
Step 2
Thinly slice the garlic. Heat the olive oil in a skillet over a low/medium heat and add the garlic, sweating gently until tender. Add the green beans, lemon zest and chilli flakes and cook for a minute or two to soften the beans further.
Step 3
Add the spinach and season with salt and pepper. Stir to combine cooking until just wilted. Serve hot.
