These simple mushrooms and zucchini are tossed with aromatic herbs and spices and roasted until tender and golden.These make a great side to a protein of your choice and are perfect mixed with cauliflower rice.
How to Make It
Step 1
Preheat the oven to 400 degrees Fahrenheit.
Step 2
Quarter the mushrooms and slice the zucchini in half lengthwise, then into half inch wide slices. Add to a small oven proof dish.
Step 3
Drizzle the olive oil over the vegetables then sprinkle over the herbs, spices, lemon zest, salt and pepper. Use your hands to rub the seasonings into the vegetables. Transfer to the oven to bake for 20 minutes turning halfway through until golden and tender.
