Cut and wash cucumbers and bell peppers. Cut the cucumber into lengthwise quarters and then cut crosswise to make small pieces.
Step 2
Cut the peppers into 1” x 1” pieces. Slice the serranos into thin rounds.
Step 3
Heat a large nonstick saute pan over medium high heat. Add in the oil once the pan is hot. Add in the cumin and saute for 30 seconds or until fragrant.
Step 4
Add in the bell peppers and serranos and cook for a minute or so.
Step 5
Add in the cucumbers and cook until all the veggies still have a slight crunch to them but the rawness has been cooked off. Add in the lime juice and salt. Taste and add more lime and salt to your liking.
