Preheat an oven to 400 degrees. On a sheet tray lined with parchment paper, arrange slices of provolone. Sprinkle the cumin, paprika, and cayenne across the cheese slices.

Bake the tray for just 5 minutes – long enough for the cheese to melt, bubble, and turn golden around the edges. Let the tray cool for just 60-120 seconds before using a spatula to roll the cheese up into rollups.

While the cheese finishes cooling, make the guac. Use a fork to mash the remaining ingredients together into a smooth guacamole. At your discretion, you can add other keto ingredients to your guac that you would enjoy.
