Keto Soda bread, which is made from a mixture of almond flour, psyllium husk powder, raisins, and eggs, makes for a delicious low carb bread despite the addition of fruit. The tender bread studded with sweet raisins makes for the ultimate treat that is delicious spread with softened butter. You could also mix in cinnamon if you wanted to make it more like cinnamon raisin bread. Regardless of what additions you want to add in, you will want to add this to your list of favorite Keto bread recipes.

How to Make It

Step 1

Preheat an oven to 350 F. Combine the almond flour, psyllium husk powder, baking powder, and Swerve together in the bowl of a stand mixer fitted with a paddle attachment. It does not need to be well mixed at this point.

Step 2

Heat the water until it is boiling. Then add the apple cider vinegar to the water and pour this mixture into the stand mixer with the mixer on low. Once all the water has been incorporated, turn the mixer on medium speed and wait until the dough stiffens. Once the dough stiffens, add the eggs and beat on medium speed until well combined.

Step 3

Add the raisins and mix well until incorporated. Do not worry about overmixing. Since this is a low carb dough, there is no gluten in here that can be overworked.

Step 4

Remove the dough from the mixing bowl with a plastic bowl scraper (to make sure you remove every last piece of dough from the bowl) and shape it into a round loaf. Place the loaf on a parchment lined baking sheet. Use a sharp knife to cut a plus sign into the top of the loaf. Press in any raisins that are on the surface of the dough so they do not burn in the oven.

Step 5

Bake the loaf for 60 minutes at 350 F and then turn the oven down to 300 F and bake for another 15-20 minutes until the loaf is cooked through. Allow to cool completely before slicing.
