Preheat your oven to 300F/150C and line a baking sheet with parchment paper. Add the almond flour, cinnamon, erythritol, baking soda, xanthan gum, and salt to a large bowl. Whisk to combine.

To another bowl, add the melted butter, egg yolk, and vanilla extract. Whisk until combined. Pour the wet ingredients into the dry and mix until a dough forms.

Place the dough onto a large piece of parchment paper and top with another piece of parchment. Roll out the dough into a rectangle ¼ inch thick.

Cut the dough into 10 rectangles measuring 2×5 inches (5×10 cm). Prick the crackers using a fork. Transfer the rectangles to the prepared baking sheet.

Bake for 20 minutes until golden around the edges. Take the tray out of the oven, split the marshmallows in half, and place them over half the crackers. Top the marshmallows with the chocolate pieces. Broil for a couple of minutes until the chocolate melts, and the marshmallows are slightly toasted.

Place the remaining crackers over the chocolate pieces. Serve warm.
