Peel the eggs and roughly chop them. Add to a mixing bowl.
Step 2
Roughly chop the cilantro, dice the bell pepper and avocado and thinly slice the scallions. Add to the bowl with the chopped egg along with the paprika, garlic powder, salt and pepper. Stir well to combine.
Step 3
Add the mayonnaise and lime juice and stir well to coat. Refrigerate until ready to serve.
