Sprinkle the smokey coffee rub over the chicken thighs. Use your hands to rub the seasonings evenly all over the meat and skin on both sides. You may use more or less rub as desired to suit your tastes.

Arrange the chicken pieces in a single layer across the lined oven tray. Transfer to the oven and bake for 25-35 minutes or longer as needed. The chicken should be entirely cooked through, juices running clear with no pink remaining. The skin should be crisp and golden. Serve hot with your preferred low carb sides.
