Step 1
Roughly chop the smoked salmon and add to a food processor along with the cream cheese, 3.5 ounces of the shrimp, the crème fraiche, lemon juice, half the lemon zest, black pepper and nutmeg.

Pulse the mixture to a semi-smooth consistency, so that it retains a little texture.
Step 3
Divide the mixture evenly between 2 large or 4 small ramekins. Cover with saran wrap and refrigerate for a minimum of 1 hour to set.
Step 4
To serve, scatter over the remaining shrimp and lemon zest.
