Bring a heaped tablespoon of butter up to room temperature and add to a small bowl. Finely chop the sun dried tomatoes and basil and add to the butter along with the lemon zest and a little salt and pepper. Mash together until well combined.

Season the steaks and rub with the oil on both sides.

Heat a skillet over a high heat. Once hot add the steaks and cook through to preference.

Top the hot steaks with the compound butter to serve.
