Bring a heaped tablespoon of butter to room temperature until soft enough to mash and add to a small bowl. Add the thyme leaves to the butter along with the parmesan, lemon zest and a little salt and pepper. Mash together until well combined.
Step 2
Season the steaks with a little salt and pepper and rub with olive oil on both sides.
Step 3
Heat a large skillet over a high heat. Once hot add the steaks and cook through to preference.

Top the hot steaks with the parmesan compound butter to serve.
