This simple tomato and cucumber
Add the pine nuts to a dry skillet over a low/medium heat. Toast gently for 3-4 minutes until lightly golden.
Finely dice the cucumber and tomato and add to a serving bowl. Toss to combine.
Roughly chop the basil and add to the salad. Season to taste and toss to combine.
Scatter the pine nuts over salad.
Whisk together the lemon juice and olive oil and drizzle over the salad to serve.
