Preheat the oven to 350 degrees Fahrenheit. Line a large shallow oven tray with baking paper. Add the almond butter, erythritol, cocoa powder, orange zest, cinnamon, ginger, almond extract, baking soda and salt to a large mixing bowl.

Crack the egg into the bowl with the other ingredients. Beat everything together until well combined. You should have a smooth cookie dough consistency.

Add the flaked almonds to the bowl. Roughly chop the cranberries and add to the bowl. Stir well, mixing them evenly throughout the cookie dough.

Divide the mixture into 10 even-sized balls and arrange across the lined oven tray. Press the cookie dough balls down gently with the palm of your hand, forming thick and even cookie shapes. The cookies will spread when baking, so ensure there is a 2 inch space between each cookie.

Transfer the tray to the oven and bake the cookies for 10-12 minutes, or until just firm to touch and golden brown. Leave the cookies to cool completely and firm up before serving. Store in an airtight container.
