Add the sesame seeds to a dry skillet over a low heat. Toast gently for 2-3 minutes until golden.
Add the tahini, lime juice, sesame oil, olive oil, water, salt and pepper to a mixing bowl. Whisk together until smooth.
Thinly slice the scallion and add to a bowl along with the tuna. Mix together until well combined and the tuna is evenly coated in the dressing.
Divide the tuna mixture evenly between the lettuce cups and scatter with the sesame seeds and fresh cilantro to serve.
