Create a double boiler by setting a small metal or glass bowl over a pot filled with 1 inch of water. Place the chocolate in a bowl and set the water to a simmering heat. Stir the chocolate with a spatula until it is melted.

Transfer the melted chocolate to a piping bag (you may also transfer to a ziploc bag, but you will need to let the chocolate cool before pouring it in). If hot, let your chocolate cool for 60-120 seconds without letting it firm up. Pipe circles about 1 ½ inches wide on a sheet tray lined with parchment paper (approx. 30). While the chocolate is still warm, set a half piece of pecan on each drop, followed by about ⅛ t each of pepitas and sunflower seeds.

Set your tray of chocolate drops in your refrigerator for about 20 minutes – until firm.
