How to Make It
Step 1
Drain the salmon and flake the flesh into a bowl. Finely chop the dill and olives and add to the bowl along with the lemon zest, salt and pepper. Mix well to combine. You may add more or less seasonings to taste as desired.
Step 2
Crack the egg into the bowl with the other ingredients. Mix well so that everything is well coated in the egg. The mixture should be bound together and easy to mold with your hands.
Step 3
Heat the olive oil in a non-stick skillet over a medium heat. Divide the salmon mixture into two even-sized portions and shape into patties with your hands. Place the patties in the skillet and cook for 3-4 minutes or until golden. Carefully flip the patties with a silicone spatula and cook on the second side for 3-4 minutes or until golden brown all over, cooked through and piping. Serve with your preferred Keto sides.
