Slice the cucumber into 4 even segments. Taking a sharp knife, score around the center of the cucumber and scoop out the seeds, being careful not to cut all the way through the cucumber.

Add the salmon, cream cheese, chives, lemon zest, salt and pepper to a small mixing bowl. Stir well to combine.
Step 3
To serve, divide the salmon and cream cheese mixture evenly between the hollowed cucumber cups.
