Heat the olive oil in a skillet over a medium heat. Roughly slice the salami and add to the skillet along with the onion and cook for a few minutes to brown the salami and soften the onion.
Step 2
Whilst the salami cooks, add the eggs to a mixing bowl with the cream cheese, salt and pepper. Crumble in the mozzarella and beat together to combine.
Step 3
Pour the beaten egg mixture over the salami and onion and allow to settle for a moment, then scramble with a wooden spoon until the egg is cooked through and mozzarella is melted.
