Making cauliflower mash at home is not difficult and it freezes really well, so make a large batch and freeze it in separate containers. This mash has a rich and tangy flavor thanks to the romano cheese. Feel free to use any cheese you like too. I think blue cheese, fontina and parm would all be delicious. Pair this with a perfectly roasted salmon fillet or garlic lemon shrimp!
How to Make It
Step 1
Set a large pot of water on the stove and bring to a boil. Once at a boil, add 2 teaspoons of kosher salt. In the meantime, roughly chop cauliflower into large pieces. Add cauliflower to boiling water and boil for 10-12 minutes until it is soft enough to be pierced with a knife.
Step 2
Drain cauliflower into a colander.
Step 3
Place cauliflower into a food processor with shaved romano cheese, ½ teaspoon salt and salted butter. Puree until very smooth. Add ¼ cup of sour cream and pulse a few more times.
Step 4
Top finished mash with chives, extra cheese and black pepper!
