Heat the olive oil in a skillet over a medium heat. Add the pork, cooking until browned all over. Thinly slice the onion and garlic and add to the skillet, cooking for a minute or two more to soften.
Step 2
Add the tomato paste, Italian seasoning, salt and pepper. Stir well to combine and cook through for 2-3 minutes more.
Step 3
Whilst the meat cooks, peel the zucchini discarding the skin. Peel the flesh into long wide ribbons then add to the skillet and stir well to combine. Cook for a minute until tender.
Step 4
Tear in the mozzarella and basil leaves and stir through to melt the cheese. Serve hot.
