How to Make It

Step 1

Finely chop the onion, tomatoes and chili and crush the garlic. Melt the butter in a small pan over a low/medium heat. Add the vegetables and sweat gently for 2-3 minutes until tender and the tomatoes have softened.

Step 2

Increase the heat to medium, add the sour cream and stir through the vegetables until hot through and simmering.

Step 3

Add the cheddar and stir until melted, taking care to not burn the cheese.

Step 4

Add the mozzarella and stir until melted and combined with the cheddar.

Step 5

Add the Gouda, season with black pepper and stir until melted and all three cheeses are smooth and well combined.

Step 6

Transfer the dip to a serving bowl and garnish with sliced scallions and a sprinkling of fresh cilantro to serve.

Ingredients

  • Tomato Raw (includes Cherry, Grape, Roma) – 3 cherry
  • Sour Cream – 2 tablespoon
  • Unsalted Butter – 1 tablespoon
  • Garlic – 1 clove
  • Hot Chili Peppers, Red, Raw – 1 each – approx 4″ – 6″ long
  • Scallions – 1 large
  • Cilantro – 1 teaspoon, chopped
  • Cheddar Cheese – ½ cup, grated
  • Mozzarella Cheese – ½ cup, grated
  • Gouda Cheese – ½ cup, grated
  • White Onion – ¼ medium – 2 1/2″ diameter
  • Black Pepper, Ground – ⅛ teaspoon
