Finely chop the onion, tomatoes and chili and crush the garlic. Melt the butter in a small pan over a low/medium heat. Add the vegetables and sweat gently for 2-3 minutes until tender and the tomatoes have softened.
Step 2
Increase the heat to medium, add the sour cream and stir through the vegetables until hot through and simmering.
Step 3
Add the cheddar and stir until melted, taking care to not burn the cheese.
Step 4
Add the mozzarella and stir until melted and combined with the cheddar.
Step 5
Add the Gouda, season with black pepper and stir until melted and all three cheeses are smooth and well combined.
Step 6
Transfer the dip to a serving bowl and garnish with sliced scallions and a sprinkling of fresh cilantro to serve.
