How to Make It

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Place the chicken breasts between two sheets of plastic wrap and flatten with a meat mallet or rolling pin to an even thickness – roughly 1/2 an inch.

Step 3

Divide the tomato paste between the two chicken breasts, spreading evenly across the surface of each.

Step 4

Sprinkle over the dried oregano and scatter over the grated mozzarella. Roughly tear the prosciutto and arrange over the chicken.

Step 5

Season with salt and pepper and drizzle with the olive oil. Transfer to the oven for 20-22 minutes or until the chicken is completely cooked through, the cheese has melted and the ham has crisped.

Step 6

Scatter with fresh basil to serve.
