Finely chop the onion, fresh sage and cranberries and crush the garlic. Add to a mixing bowl along with the thyme, ground pork, salt and pepper. Use your hands to mix together well until thoroughly combined.

Divide the mixture into 12 even portions and roll into meatballs.
Step 3
Heat the olive oil in a skillet over a medium/high heat. Add the meatballs and cook through completely until golden brown all over.
Step 4
Arrange three meatballs per lettuce leave to serve.
