Preheat the oven to 400 degrees Fahrenheit.
Heat the olive oil in an oven proof pan. Season the chops and add to the pan, cooking until browned all over.
Lightly crush the garlic and add to the pan along with the capers.
Transfer the pan to the oven and bake for a further 10 minutes or until cooked through completely.
Top the chops with tonnato dressing to serve.
