How to Make It

Step 1

Preheat the oven to 400 degrees Fahrenheit.

Step 2

Add the basil, pine nuts, lemon zest, parmesan, garlic and salt to a food processor. Blend to combine.

Step 3

Add the lemon juice and olive oil to the food processor and blend to combine.

Step 4

Arrange the cod fillets across a shallow baking tray and coat the top of each with the pesto.

Step 5

Crush the walnuts and sprinkle over the top of the pesto coated cod.

Step 6

Transfer to the oven to bake for 12-15 minutes or until the fish is cooked through and the walnuts are golden.

  • Cod, Cooked From Fresh – 2 fillet – each 4 ounce raw
  • Olive Oil – 2 tablespoon
  • Pine Nuts – 1 tablespoon, whole pieces
  • Parmesan Cheese – 1 tablespoon, grated
  • Garlic – 1 clove
  • Lemon Peel Or Zest Raw – 1 tsp
  • Basil, Fresh – ⅔ cup, whole pieces
  • Lemon Juice – ½ tablespoon
  • Salt, Sea Salt – ⅓ teaspoon
  • Walnuts – ⅓ cup
