Calling all peanut butter lovers! Even though you are on a Keto diet, you can still enjoy granola! Our granola is perfectly Keto and Low Carb! It is made from roasted Valencia peanuts, sliced almonds, unsweetened coconut flakes, and coconut oil. You will love the satisfying combination of crunchy peanuts and coconut flakes sweetened with monk fruit. The granola will store well for up to one week in an airtight glass container or longer in the refrigerator or freezer. Due to this Keto granola’s high-fat content, chill it if it is not consumed within a week. We like to store it in the freezer since it makes a large batch.
Preheat the oven to 250F (120C). Combine the monk fruit, peanut butter, melted coconut oil, vanilla extract, and a pinch of salt in a medium-sized mixing bowl. Stir well to incorporate the coconut oil.
Add in the peanuts, sliced almonds, and unsweetened coconut flakes. Combine the mixture well with a spoon. Mix well to incorporate all the liquid ingredients around the nuts.
Pour the mixture onto a parchment-lined baking sheet. Make sure the mixture is touching in one mass but is spread into a thin layer. Doing this will prevent burning.
Bake for 1 hour and 15mins stirring every ½ hour or so until the granola is nicely toasted and browned on the outside. Allow to cool on the baking sheet fully. You will want to make sure the granola is cooled before storing it.
Allow to cool completely before serving. Feel free to sprinkle the hot granola with a little sea salt to amp up the sweetness and flavors of the granola. Enjoy!
