Add the cocoa powder, ground almonds, 3 tablespoons of desiccated coconut, erythritol and salt to a mixing bowl. Mix well to combine. You may add more or less cocoa powder to taste and adjust the sweetness to preference.

Add the peanut butter to the bowl. Mash everything together until well combined. Add a tablespoon of water and work the mixture together with your hands to form a ball.
Step 3
Divide the prepared mixture into 12 even-sized portions. Roll each portion into a ball with your hands. Arrange across a clean work surface or plate.
Step 4
Add the remaining 1.5 tablespoons of desiccated coconut to a small bowl. Take each peanut butter ball one at a time and roll it in the coconut until evenly coated all over. Store in the fridge in an airtight container until ready to eat.
