Preheat the oven to 375 degrees Fahrenheit and line a shallow oven tray with baking paper.

Finely dice the chorizo (1.5 tbsp) and finely chop the rosemary. Add to a mixing bowl along with the parmesan, almonds and black pepper. Mix well to combine.
Step 3
Spoon a heaped tablespoon of the mixture onto the lined baking tray then repeat 5 more times so you have six piles of mixture. Leave a gap between each and press the mixture into a rough circle shape with your hands.
Step 4
Transfer to the oven to bake for 6 minutes or until hot through, golden and bubbling. Set aside to cool completely and firm.
