Heat the olive oil in a large non-stick pan. Season the cod fillets and add to the pan, cooking until lightly golden on one side – about 4/5 minutes.

Carefully turn the cod over and add the butter to the pan along with the capers and lemon zest. Continue to cook the cod, spooning the butter over the fish until opaque and completely cooked through.
Step 3
Top the cod with the Polonaise dressing to serve.
