Thinly slice the cabbage and the onion. Heat the oil in a skillet over a medium heat and add the onion and cabbage, sweating for a minute.

Add the apple cider vinegar, salt and pepper and stir well, cooking for a minute more to soften.
Step 3
Roughly dice the chorizo and add to the skillet. Stir well and fry for 5-6 minutes until the chorizo is golden brown and cooked through and the cabbage is tender.
