Peel and roughly chop the carrot. Add it to a high-power blender. Add the orange zest and 1 cup of water. Secure with the lid.

Blend on low until a smooth puree form. Pour the remaining water while the blender is running. Meanwhile, line a sieve with a clean milk/nut cloth and place it over a jug.

Pour the blender’s contents into the lined sieve. Let the juice drain. Twist and squeeze the cloth to extract all the juice.

To the jug, add the orange extract, orange juice, lemon juice, and stevia. Mix and taste. Adjust sweetness and acidity to your liking.
