Cut the chicken breasts into 1-inch cubes and transfer them to a bowl. Season with ½ tbsp of cajun seasoning and 1/8 tsp each of salt and pepper. Toss until coated.

Slice the zucchini into half discs, chop the pepper into chunks, slice the onion, and cut the broccoli into small florets. Set them aside.
Step 3
Add the olive oil to a skillet or a nonstick pan over medium-high heat. Once hot, add the chicken bites and cook for 5-7 minutes until cooked through. Transfer to a plate and set aside.
Step 4
Add the sliced onions to the same pan/skillet and fry for 2 minutes. Add broccoli, zucchini, and bell pepper. Season with ½ tbsp cajun seasoning and 1/8 tsp each salt and pepper. Cook on medium heat until the vegetables are crisp-tender.
Step 5
Deglaze the pan with chicken broth, then add the cooked chicken pieces back to the skillet. Garnish with chopped parsley and red chili peppers. Serve immediately and enjoy!
