Brush the olive oil inside the mason jar. Wash and roughly chop the spinach and grate the cheddar cheese. Crack the eggs into the bottom of the jar, followed by the salt and black pepper. Then, add the cheese and chopped spinach on top.

Secure the mason jar with a lid and transfer it to the refrigerator. When ready to cook, shake or stir using a spoon until well mixed. Then, remove the cover and microwave for 1-2 minutes.

Serve right away. Store the uncooked ingredients in the mason jar for 2-3 days and prepare it when you are ready to eat. Add toppings such as fresh herbs and crumbled feta cheese, if desired.
