Heat the olive oil in a skillet over a medium heat. Finely dice the onion and bell pepper and roughly dice the bacon. Slice the okra into 1/2 inch chunks discarding the tops and tips. Add to the pan along with the dried herbs and spices and stir well to combine. Pan fry for 5-6 minutes until the bacon and okra are cooked through and golden brown.
Step 2
Add the eggs to a bowl and season with salt and pepper. Beat to combine.
Step 3
Add the egg to the skillet and allow to settle for a minute then scramble with a wooden spoon, cooking to preference.
Step 4
Optionally serve with fresh cilantro.
