Preheat an oven to 350 F. Line a muffin pan with 9 silicone or paper liners. In a food processor, combine the coconut flour, baking powder, kosher salt and coconut oil until well blended.
Step 2
Add the eggs and blended well. The mixture will thicken more in the next few minutes so be sure to allow it to stand before scooping into liners.
Step 3
Divide the batter between the 9 liners, filling them about ¾ of the way full. Bake for 16-18 minutes or until the tops are slightly browned and spring back to the touch.
