How to Make It

Step 1

Preheat your oven to 350 degrees. Line a 6-count muffin tin with paper liners. Make sure your frozen green beans are thawed completely before using them. Chop them up into small pieces if they’re not already chopped. If you only have fresh green beans available, instructions for preparing and using them are outlined in the heading paragraphs to this recipe. Fill each paper liner with 1 oz of thawed green beans.

Step 2

Cut cold cream cheese up into cubes and arrange them on top of the green beans. Two or three cubes of cream cheese per serving are best. Cook strips of bacon to extra crispy. Once the bacon has cooled, cut the bacon up into bits. Sprinkle the cooled bacon bits over the tops of the green beans and cream cheese. For this recipe, it’s okay if the ingredients are piled a little higher than the paper liners.

Step 3

Whisk together the eggs, heavy cream, salt, pepper, onion powder, and nutmeg together in a bowl or large measuring cup. Pour the egg mixture over the casserole ingredients evenly until each paper liner is filled. Let the egg filling settle before putting the muffin tray into your oven. Bake the mini casseroles for 25-27 minutes. After the egg batter rises in the oven, you can let it settle down while it cools before serving.

  • Onion Powder – ¼ teaspoon
  • Nutmeg Ground – ⅛ tsp
