In a mortar, add the mint leaves and erythritol. Use the pestle to lightly muddle together. The mint leaves will gently break down and release their oils.
Step 2
Add the crushed ice, lime juice, mint and erythritol mixture to a drinks shaker or large glass jar. To that, pour in the white rum, vanilla syrup and coconut cream. Shake well until all the ingredients are mixed together.
Step 3
Divide the mixture equally into 2 serving glasses and top with soda water. Serve immediately. Ensure the soda water is added after the mix has been poured, as shaking the mix with the soda water will create a big mess!
