These cute little meringue nests have all the crunch and flavor of a classic meringue, but without the sugar. With a filling of sweetened whipped cream, these make great desserts for guests, simply top with berries of your choice.
Preheat the oven to 195 degrees Fahrenheit and line a shallow oven tray with baking paper.
Add all the xylitol to a food processor and blend on a high speed setting to form a fine powder.
To make the meringue, add the egg whites to the clean bowl of a stand mixer and whisk on a high speed setting for about 30 seconds before adding ½ cup of the xylitol powder, a little at a time.
Keep whisking for about 5 minutes until glossy, stiff peaks form.
Fit a piping bag with a large star shaped nozzle and fill the bag with the meringue mixture.
On to the lined baking tray, start piping out the meringue nests. Start in the center and pipe outwards forming two circles around the center. Continue piping 2 layers on top of the outer circle to form the sides of the nest.
Place the meringues in the center of the oven to bake for an hour. After an hour, turn the oven off and leave the meringues in the oven with the door closed for an hour. The meringues will be slightly golden and tacky to touch.
Leave the meringues in a cold oven over night to set completely.
When you are ready to serve, add the cream to the stand mixer with the remaining powdered xylitol. Whisk until light and fluffy yet slightly firm. This will only take 2-3 minutes.
Pipe or spoon the whipped cream into the center of each meringue.
Top with a few fresh berries to serve.
