Peel and slice the onions. Add to a bowl and season with salt. Massage the onions for a couple of minutes until they begin to soften. Leave to rest for five minutes, then repeat the process.

Pack the onions tightly into sterilized jars. Add the dried dill and pour over the water. Seal lightly with the lid.

Leave at room temperature for seven days before opening. Serve with some extra virgin olive oil. It pairs perfectly with some low-carb vegetables or goat cheese.
