This delicious salmon is topped with a sweet and crunchy crumb of ground almonds and pecans, with a hint of rosemary and a maple mustard coating.This is perfect served alongside a simple green

How to Make It

Step 1

Preheat the oven to 400 degrees Fahrenheit and lightly oil a shallow oven tray.

Step 2

Add the almonds to a small mixing bowl along with crushed pecans. Finely chop the rosemary and add to the bowl along with the salt and pepper. Stir well to combine.

Step 3

Add the olive oil, lakanto syrup and mustard to a small mixing bowl and whisk together until smooth.

Step 4

Liberally coat four small salmon fillets with the maple dressing.

Step 5

Sprinkle the crushed nut mixture over the salmon fillets, coating each.

Step 6

Transfer to the oven to bake for 10 minutes or until the salmon is cooked through and flakes easily with a fork.
