Cut the ends of the radishes and slice any larger radishes in half. Arrange across a shallow oven tray.

Whisk together the syrup, oil, lemon juice, zest, thyme, salt and pepper. Drizzle the oil mixture over the radishes and use your hands to rub the seasonings all over the vegetables.

Transfer to the oven to bake for 18-20 minutes or until tender and caramelized.
